Calling all health freaks! This is a cute little recipe that I created a few years ago, I used to whizz these cookies up in batches as they're quick and easy to make - they also last for a good few days! They're a great go-to snack for pre/post workout - especially if you're peckish and don't want anything too indulgent! Since going to university I don't really find the time or money to bake that often, so I haven't actually made them in yonks! This particular recipe is definitely up there as one of my favourite creations - they're super soft, yummy and healthy, and using fresh raspberries gives each one a real bite to it! You won't need much money to make them either so if you want to give it a go, here's what you'll need and how to make it...


(makes 9 medium sized cookies)
- 1 scoop (30g) vanilla protein powder (I use Vanilla Cookie from MyProtein, you can find it here)
- Half a cup of rolled oats (I used Quaker)
- 150g low fat or fat free greek style yoghurt
- 1 teaspoon vanilla extract
- 2 teaspoons of sugar (I used Stevia - healthy alternative!)
- 1 teaspoon baking powder
- 50g raspberries
- 20g dark chocolate chips (optional)


1. Preheat oven to 180-190 degrrees Celcius (depending on your oven!)
2. Mix together the protein powder, oats and yoghurt until a thick paste/dough has formed
3. Add in the sugar (or Stevia), baking powder and vanilla extract until everything is combined
4. Lightly fold in the raspberries (and chocolate chips) until they start to break and merge with the mix
5. Split the mix into 9 or 10 balls and place each ball onto a baking tray. (Using greasproof paper really helps to get the cookies off!)
6. Lightly push each ball down so they are a little flatter - they will spread in the oven too so they are naturally quite thin
7. Place in the oven for 15 minutes or until golden brown - make sure they don't burn!
8. Leave to cool for 5 minutes or you can eat them warm!
